Yeast, yes yeast.

It has been about a year and half since I last wrote! Tsk tsk. Anyway I’m here to tell you the importance of yeast to your brew.  We know the combination of hops, grain and yeast make a variation of ales and lagers that make up most of the beer we drink.  The variation of hops give different bitterness as well as floral citrus or piney flavors.  While the grains give a variation of malty-ness to our beer. But what about yeast? Is it all the same, does it all do the same thing? We really just want the sugar converted to alcohol right?


Well, yes and no.  The function of the yeast is to convert sugars into alcohol however, different yeast also give different flavors to our beers. Do you want a clean hoppy beer or a malty sweet beer? Are you trying to copy a specific style of beer?  These are all questions you should be asking while preparing your next recipe.  White Labs has at least 35 different ale strains; that’s not including seasonal, wheat or Belgian beer styles.  Different yeast strains will bring out or mask different flavors in your beer depending on what your trying to achieve.  Next time you’re at your local homebrew make sure to ask.
